National lamb slab

Description

Selected national lamb, with a very mild flavor, vacuum confit at low temperature for long hours of cooking. Later we debone it by hand and mold the meat into a griddle.

The product is presented deep-frozen. For regeneration, defrost in positive cold for 24 hours, cut while still cold, and regenerate in the oven or grill according to the recipe.

  • Open the bag and remove the slab
  • Cut the slab (on the GBECH cutting board) 180g portion
  • We brown the portion on the side of the skin on the griddle
  • Heat the portions in the oven
  • Put on the plate

  • Open the bag and remove the roll
  • Cut the roll as per the plate we want to prepare
  • Brown the portions on both sides
  • Heat the portions in the oven
