The winter fruit marmalade is made with citric fruits, the supreme Mediterranean fruits during this season: oranges, lemons and limes.

To make vinaigrette for a pear and chestnut salad with mature cheese, with a Jijona nougat or macadamia walnut ice-cream or simply use it as a base by adding it to gravy for a good stuffed turkey or chicken. It is ideal as the base for vinaigrette for mussels or other types of seafood.
