Oxtail slab

Description

Choice oxtail, premium quality and optimal maturing, low temperature confit and in olive oil for several hours.

After cooking, we manually separate all the subcutaneous fat, only leaving the collagen in order to get a more succulent and tender meat.

We then mould the meat into a slab shape in gastronorm trays. The product is presented along with the GBech cutting board to ease portioning.
