For hard cheeses: we have created a sweet sauce that reminds us of baked apples, which does not fall short with a mature cheese but does not hide the subdued aromas of a young cheese either.
To accompany these cheeses in the mouth we have caramelised the chunks of apple and they are accompanied with soft pistachios from Turkey and the sublime aroma of cinnamon from Sri Lanka. A perfect fusion for all types of hard cheeses.
