Romesco sauce is a typical sauce in Catalonia, specifically from Cambrils (Tarragona). It is made with tomatoes, onions, red peppers, chilli pepper, almonds and roasted hazelnuts. As usually happens with popular dishes, there are as many versions as there are cooks who make it.
Romesco has the splendid capacity to turn any salad or vegetable into a delicious dish. Ideal, without a doubt, to accompany calçots.
