Description

Choice beef cheek nut, low temperature confit and in olive oil for several hours.

After cooking, we mould the meat into a bar-shaped roll using a high pressure vacuum system, which allows for the portion to be easily marked and cut without it falling apart when being cooked.

Practical and manageable format to prepare a multitude of recipes, with total cost control and 0 wastage.
